Peel and wash the potatoes and then boil them in salted water for 20 minutes.

Drain and mash them.
Wash the vegetables and boil them, squeeze and chop them into very fine pieces.

Thinly slice the leeks and sauté them, add the cream and let it cook for 15-20 minutes.

Combine the potatoes, vegetables and leeks with the cream, add grated cheese and a sprinkle of pepper.

Prepare the dough by combining flour and water. After leaving it to rest, form thin sheets and make small balls of filling. Fold the dough back on itself, creating some large ravioli, making sure to seal the edges tightly.

Fry for a few minutes on both sides in hot oil.
